Apéti, yet another restaurant opening in Saint-Germain-des-Prés? Far from it! With experience from the world of luxury, Hugues simply created the 1st temple of fruits and vegetables in the 6th arrondissement: a gourmet kitchen based on vegetables of the season, which is also organic and gluten-free! Unique, creative, aesthetic and… delicious. However, Apéti does not proselytize; It offers an alternative and does not only cater for gourmets vegetarians and vegans, but also “flexitarians”, those who one day eat meat or fish, and the next day, a different, purely vegetable dish. In this “healthy” era –fruits and vegetables are full of nutritional properties– the concept appeals and Saint-Germain is keen to discover the “Apéti Roll,” a spring roll revisited by the House, sweet or savoury, the “the Migratory platter” or even the “Not Cheesecake”, a variation without dairy products! The vegetables, which in part come from the restaurant’s own garden, located in the Essonne, are prepared in all their forms, flavours and textures. Wine, tea and coffee are also organic. “This kitchen is one of the kitchens of tomorrow” the founder asserts, who has therefore developed cooking classes open to the public.
