Passion, because the man worked for ten years in the world of Haute Parfumerie, climbing all the levels of this industry, before choosing the world of cuisine. Committed to product excellence, service and luxury know-how, he had finally ceased to recognize himself in this profession and, determined to enjoy himself while providing pleasure, it was to the world of gastronomy that this epicurean turned his nose. Thus, his cooking is all about sharing, generosity and conviviality. In the sumptuous dining room, all in marble and woodwork, adjoining the cosy fireplace-library corner, he offers a simple and tasteful food. Jérôme Jullion likes to reinterpret, with seasonal products, the classics of cuisine by bringing them up to date. Therefore, the chef is delighted to serve a cabbage stuffed with a 6-hour braised beef. A dish that no one takes the time to prepare anymore and which, however, not only is tasty, it also awakens delicious childhood memories in every gourmet.
